Sweet Potato Crunch

Sweet Potato Crunch Casserole







This is a Wonderful Holiday Casserole and a must try for any time you make a delicious ham!!
My friend, Teresa makes this every year for our Big Thanksgiving dinner and Everyone just loves it!!
It is just the right amount of sweet to go with the savory smokey ham but anyone that likes sweet potatoes will love this yummy casserole.


Ingredients:
3 c. mashed sweet potatoes
1 c. sugar
1/2 c. butter 
2 eggs beaten
1 tsp. vanilla
1 tsp. cinnamon
1/3 c. milk

Topping Ingredients:
1 c. brown sugar
1 c. flour
1/3 c. butter softened
1 c. chopped nuts

PreHeat oven to 350 degrees.  
Mix sweet potatoes, sugar, butter, beaten eggs, vanilla, cinnamon and milk together, (you can use a hand mixer to quickly do this).  
Put mixture into a 13x9 baking dish, no need to grease the pan because of the butter in the mixture.
Mix the ingredients for the topping until crumbly and sprinkle all over the top of the casserole.
Bake at 350 degrees for approximately 30-35 minutes.
